Ello eco-beauties! Today we are taking a "whole"istic approach to skincare by nurturing our bodies from the inside out. When your cells are nourished -- your skin glows! Common sense, right? (being that skin is your body's largest organ)! It's a living tissue that reflects overall internal balance and health. On the radar today: Ch-Ch-Chaaa Chia Seeds! These little black seeds are the highest natural source of omega-3s, a type of fatty acid that benefits your skin by helping to strengthen cell membrane barriers which allow water and nutrients in (while keeping toxins out!)

Cool, huh'?! Now let's get down to (delicious!) business. Chia pudding two ways:
1. Cinnamon Coconut Chia Pudding
- 5 tablespoons chia seeds
- 2 cups unsweetened soymilk, almondmilk or ricemilk
- 1/2 teaspoon pure vanilla extract (optional)
- 2 tablespoons sweetened coconut flakes
- 1/2 teaspoon cinnamon (or add more to taste)
Mix together milk, chia seeds, cinnamon, and vanilla extract. I like to make mine in a mason jar with lid -- a quick maraca-esque shake is all you need to combine evenly. (Dancing optional, but highly recommended.)
Refrigerate overnight, perhaps shaking once again if some seeds settle to bottom of glass. Garnish with coconut flakes, berries, granola, bananas and another dash of cinnamon and enjoy!
2. Raspberry Coconut Chia Pudding Pops
- 1/2 cup light coconut milk
- 1/2 cup unsweetened almond milk
- 3/4 cup raspberries
- 2 tablespoons chia seeds
- 1 tablespoon sweetened shredded coconut
- organic sugar or honey to taste
This fun idea comes from the Skinny Taste vault -- and just in time for summer! Combine all ingredients in a large covered bowl. Refrigerate for 4 hours allowing chia to expand and become gelatinous. Pour into Popsicle molds and freeze overnight. Nom. Nom. Nom.
